What is freeze-dried instant coffee?

Freeze-dried coffee is an instant drink that, upon coming into contact with water, regains its fundamental characteristics in seconds. This coffee is gaining popularity in Spain, where more and more people consume it due to its immediacy in preparation and practicality.

Today, we are going to talk about this delicious coffee and we will get to know all the details about how it is made, what its advantages are… and, of course, where to find it.

Is freeze-dried coffee the same as soluble coffee?

The freeze-drying process is the method that best preserves the aroma and flavor of instant coffee. Unlike soluble coffee, freeze-dried coffee does not undergo any chemical manipulation and is therefore more environmentally friendly and more complex.
To make soluble coffee, the coffee powder is extracted, concentrated and dried by spraying. In this process, the aroma and flavor are lost, so it is necessary to add those again later artificially.
In the freeze-drying process, the coffee is subjected to ultra-freezing. Afterwards, it is placed in a chamber that dehydrates it directly. And, this way, the coffee retains all its organoleptic properties intact.

How is freeze-dried coffee made?

To make freeze-dried coffee, expert hands are required, since it is a complex process. Here is how it is made step by step:

  1. ROASTING. First, the coffee is roasted at high temperatures to obtain its unmistakable aroma, flavor and color.
  2. GRINDING. Next, the coffee beans are ground.
  3. EXTRACTION. Afterwards, it is placed in closed tanks where it is subjected to a solid-liquid extraction process by injecting hot water at high pressure.
  4. CLARIFICATION. Later, the coffee is filtered and cooled, by lowering the temperature to the point where ice crystals are formed. Dry air is then incorporated into the extract at low temperatures.
  5. FREEZING. Finally, the extract is frozen at approximately -50ºC and undergoes a sublimation process. That is, it evaporates because of vacuum and temperature.

And… voilà! Finally, we have a freeze-dried coffee.
Now all you have to do is enjoy it by simply adding water, milk or vegetable drink to obtain the infusion again with all the aroma and flavor characteristics perfectly preserved.

Ingredients

  • 300 g of vegetable drink
  • 100g of AlterNativa3 coffee
  • 40 g of sweetener or sugar
  • 2 g of agar-agar (powdered vegetable thickener)
  • 1 tablespoon of vanilla essence

Step by step

  1. Put the vegetable drink, the coffee and the sweetener (or sugar) in a saucepan. Add the agar-agar with a strainer and then add the vanilla.
  2. Stir everything well and, in about 2 minutes, bring it to the boil.
  3. Remove from the heat and continue stirring.
  4. Distribute it into molds, let it cool down and then put it in the fridge until they are well set.
  5. Unmold and serve: alone, with cream, with caramel… whatever you prefer!

Ingredients

For the base (4 servings/glasses)

  • 15 g of almond flour
  • 20 g of coconut flour
  • 1 teaspoon of cinnamon powder
  • 1 teaspoon of psyllium
  • 2 eggs
  • 80 ml of coconut milk
  • 2 teaspoons of AlterNativa3 freeze-dried instant coffee
  • 2 teaspoons of powdered erythritol

For the cream

  • 30 g of erythritol powder
  • 100 ml of coconut milk (the thick part of the can)
  • 1 teaspoon of agar-agar
  • 100 ml of soaked cashews (12 hours to remove maximum antinutrients and soften them)
  • 100 ml of vegan cream cheese
  • 1 teaspoon of liquid vanilla

 Step by step

  1. Beat the eggs, mix them with the flours, cinnamon and psyllium and put it in the microwave for 2 minutes.
  2. Heat the coconut milk and add the instant coffee and the erythritol. Stir until everything is perfectly integrated.
  3. Crumble the mixture from the microwave well. Then, add the coffee mixture with coconut milk and beat it with a hand blender until it has a very, very dense puree texture.
  4. Put the mixture in the glasses as the base of the tiramisu and set it aside.
  5. Now, let’s make the tiramisu cream. First, grind the drained cashews with a blender together with the coconut milk.
  6. Once it has achieved a creamy texture, put it in a bowl, add the rest of the cream ingredients and mix it with a whisk to achieve a perfect and homogeneous texture.
  7. Add the cream into the glasses on top of the coffee base and let it cool down overnight if possible.
  8. Before serving it, if you want a perfect result, sprinkle some cocoa powder on top.
